Perfect Roma tomato from imperfect foods stuffed with my healthy version of chicken salad:
- 1 can Costco chicken
- 2 tbs chopped red onion
- 2 chopped celery stalks
- 1 generous tbs. nonfat Greek yogurt
- 1 tbs. Primal Kitchen Foods Paleo Mayo
- 1 dash lemon pepper
- 1 dash Everything But the Bagel seasoning.
This recipe makes 3 servings. I stuffed the tomato halves & topped with chopped celery leaves.
