Huevos en Purgatorio

One of my favorite breakfasts is Huevos en Purgatorio, e high means “eggs in hell” because they simmer in bubbly marinara sauce! Anytime I can set aside a cup of sauce I love to make this dish.

Ingredients:

  • 1 Handful fresh spinach, stems removed
  • 1/2 tsp. Olive oil
  • 1 Fresh Roma tomato, chopped
  • 1 c. Marinara sauce
  • 2 Whole eggs
  • 1 oz. Choice of cheese such as parmigiana, asagio, or mozzarella, cut or shaved
  • Chopped fresh herbs (I used basil & parsley)
  • Pinch of crushed red pepper flakes
  • Seasonings: salt & fresh ground pepper

In a small heavy pan cook the chopped tomato, a pinch of salt & handful of fresh spinach in 1/2 tsp olive oil until tomato is softened & spinach is wilted.

Turn heat to medium & add 1 c marinara sauce, black pepper & bring to a light simmer.

Gently crack eggs into the bubbling sauce & cover the pan to poach the eggs. This will take 5-6 minutes. If using mozzarella cheese at it for the last minute of cooking.

Top eggs with a sprinkle of cheese, chopped fresh parsley, basil or both & a pinch of hot pepper flakes.
