Green Bean & Tomato Salad

Ingredients:

  • 1 lb. Fresh green beans, ends trimmed
  • 10 Grape or Cherry tomatoes, halved
  • 1/2 small shallot, very thinly sliced
  • 1/2 Garlic clove, minced
  • 1 tbs. Red wine vinegar
  • 2 tbs. Olive oil
  • Sea salt & ground black pepper
  • 1-2 oz. Crumbled Feta

Place the shallot & garlic in a small bowl with the olive oil, vinegar, a pinch of salt & a generous amount of pepper. Shake the bowl to blend & allow the shallot to marinate while you prepare the green beans.

Steam the green beans until tender. Place in a colander & rice with cold water. Add ice to thoroughly chill the beans. Remove ice & pat dry with a paper towel.

Lay the beans on a serving plate & top with the tomatoes. Pour the dressing over the top & add the crumbled feta cheese.
