I ordered one pound of bok choy but my Instacart shopper brought all this! Time for a huge pot of one of my favorite soups… Chicken Cilantro Wonton Soup. I rarely use packaged ingredients but theses wontons from Trader Joe’s are a favorite of mine. There’s plenty of meal prep done with this!

Chicken-Cilantro Wonton Soup Ingredients:

  • 1 lb. Baby bok choy
  • 1 Handful fresh spinach
  • 1/2 Small onion, finely chopped
  • 2-3 Scallions, chopped
  • 2 Qt. Chicken or vegetable broth
  • 1 pkg. Trader Joe’s Chicken Cilantro Wontons
  • 1/4 c. Chopped cilantro plus some fresh cilantro for serving

Add the onion & broth to the pot & heat to boiling. Turn the temperature down to maintain a simmer. Slice the ends off the bok choy then cut the white part into 1/4” slices & add to the pot, simmer 5 minutes then add the green portion of the bok choy & the spinach. Simmer 2-3 minutes.Next add the cilantro, scallions & the frozen wontons. Raise heat & bring to a gentle boil. Simmer only 4-5 minutes & turn off the heat. Serve with fresh cilantro. This soup freezes & reheats nicely.
