Apple and Celery with Almond Butter and Berries

Almond butter is so delicious and it’s a “good fat” so I enjoy it as part of an afternoon snack on my carb day. The apple adds some carbs here but it’s all reasonable. You can switch the berries around using what you find fresh and in season. Alternately, toss in a few dried cranberries or raisons instead.

Ingredients

  • 1/2 apple (core removed)
  • 1 tsp lemon juice
  • 2 celery stalks
  • 2 tbs almond butter
  • Fresh berries

Preparation

  • Cut and core the apple and place in a small bowl. Mix in the lemon juice to coat all surfaces of the apple
  • Cut the celery into strips.
  • Measure out 2 tbs. (about 32 grams) of almond butter.
  • Assemble your snack by arranging all ingredients and store in an airtight container
  • *Check the label before you buy almond butter to be sure it does not contain an excess amount of added sugar. It tastes fine just the way nature made it
