Rotisserie Chicken Salad Lunch

This is one of my favorite recipes using rotisserie chicken. It adapts very well for leftover turkey. In fact, I look forward to the leftovers so I can make this salad! Makes 3 servings the way I have assembled it in this recipe. You can always adjust depending on how much turkey you have!

Ingredients

  • 14 oz. Rotisserie Chicken (white meat)
  • 1/8 c. Chopped onion
  • 1/3 c. Greek Yogurt, Plain, Whole Milk
  • 2 Celery stalks
  • ½ tsp. Sea Salt
  • ½ tsp. Ground black Pepper
  • ½ tsp. Dry or fresh dill

Mis en Place Shred the chicken or dice it with a knife. Chop the celery and  onion

Preparation

  • Combine all prepared ingredients in a large mixing bowl
  • Combine well
  • Divide incorporated mixture into 3 servings.

Blend all ingredients

Suggestion – Serve with fresh avocado over salad with lemon, tomato and cilantro. Also makes a great snack with whole grain crackers
