Eating on a budget

Eating well does not have to be expensive. I like to share ideas and one of my favorites is a whole chicken. You can get 13 or meals from it if you don’t waste anything.

The most expensive food is the food you waste!

So to do this you need to start with a whole chicken. Get a good sized one free of hormones and additives. It may cost more than the others but it is well worth it and this bird will go far.

Let’s start by making Rotisserie Chicken. If you have a grill you can always do it there and the results are amazing. A quick and easy rotisserie chicken is my Instant Pot Rotisserie Chicken. This comes out juicy every time. If you love a crispy skin and the aroma of an oven baked chicken try the Oven-roasted Chicken and give the cauliflower puree a try, too!

So I typically use some sliced breast meat as an entrée portion from the rotisserie chicken. Then I remove the leg-thigh sections and package them up as lunches along with veggies.

The other breast half is what I like to use for my Rotisserie Chicken Salad. This is the basic recipe but my favorite way to make this is to add dried cranberries & either walnuts or pecans. You can also add chopped apple, nuts, grapes or any combination of these. This makes about 3 servings.

I also like to take about 2 ounces of chicken meat to make one of my favorite power snacks: Chicken Fruit Bowl.

So that’s 6 meals so far! Now it’s time to really make full use of that chicken. Making bone broth is one of the easiest things you can do and it yields lots of nutritious soup. One chicken carcass will give you a big pot of Bone Broth. That pot of broth can be divided so you can freeze some for future use. I usually make a pot of soup right away. One of my favorites is Chicken Cilantro Wonton Soup.

There are so many more possibilities but as you can see, one chicken goes a long way!
