I love this late afternoon snack to “power-up” for my evening workout. It’s easy to make ahead and combines just the right mix of sweet and savory flavors.
Use oranges instead of grapefruit, if you like…. whatever is ripe and in season
Ingredients
- 1/3 apple (core removed)
- 1 tsp lemon juice
- 1/3 grapefruit
- 1 tbs walnuts
- 2 oz. chicken breast
Cut and core the apple and place in a small bowl. Mix in the lemon juice to coat all surfaces of the apple
Cut the grapefruit into 6 wedges using 2 per serving
Assemble your snack by arranging all ingredients and store in an airtight container
