Freezer Meal: crockpot chicken curry

Curry simmering in the crockpot tastes even better. This easy meal was prepped & frozen on the weekend ready to just drop into the crockpot on a busy weekday morning.

Place a plastic crockpot liner in a bowl just slightly smaller than your crockpot.

Add the following ingredients:

  • 1 lb. chicken thighs 
  • 3 c. Cauliflower 
  • 2 c. Carrots in large pieces 
  • 1 can unsweetened coconut milk
  • Zest from 1 lime
  • 1 tbs. grated ginger
  • 2 tbs. curry powder 
  • 1 tsp. cumin
  • 2-3 smashed garlic cloves
  • 1 tbs. crushed pepper flakes
  • 2 tsp. Sea salt

Secure the crockpot liner & freeze everything in the bowl. You can take your bowl back after the bag is frozen… the purpose is to make sure it will fit in your crockpot. Trust me on this one!

On the day you want to enjoy the curry place the frozen crockpot liner in the crockpot in the morning & cook on low.

Serve the curry with rice, lime & fresh basil.

Freeze leftovers for future go-to meals.
