November produce offers a great variety of fruits, vegetables and nuts. I love oven roasting most of these fall vegetables and incorporating nuts in salads, snacks and pesto!
One of the things I love about fall produce is that it keeps really well so you can stock up without worrying about waste!
Here are some ideas for November seasonal foods:
- Winter Squash such as butternut, acorn, fairytale pumpkin and others keep for a long time. They can last more than a month in a cool, dry place like a cellar. If you refrigerate, don’t leave them in plastic bags because they do much better when they breathe. You can also peel squash and freeze it in ready-to-use cubes. Place a large zip lock in the freezer and shake every hour or so until frozen so you can easily remove the portion you need. Another favorite thing to do is to make and freeze soups or squash purees. These can be heated anytime or later made into delicious sauces.
- Nuts are another fall item that can last up to a year in the freezer or for months in the refrigerator. You can keep smaller amounts in an airtight container in the pantry. Avoid an environment that is too hot or has too many temperature changes. With so many great varieties of nuts in season now it’s a great time to make a few batches of snack mix!
- My Healthy Pumpkin & Carrot muffins are a great breakfast or snack item… power-up for that workout! These are easily frozen to enjoy any time.
- Another fall dish that tastes so homey uses apples, Roast Pork Tenderloin with Sauerkraut & Apples.
- Don’t forget all those nutritious winter greens & salad ingredients in season now! Kale, chicory, turnip greens and celery all taste their best when they can be eaten as soon as they’re picked. Leftover greens? Just toss them in a baggie with fruit or berries for a quick smoothie when you need it.
