This recipe makes one serving for now & one to keep & reheat another day. This is a great meal prep item that keeps for several days.

Ingredients 

  • 1 c. Rolled oats
  • 1/2 c. Water
  • 1/2 can (15 oz.) Pumpkin purée 
  • 1 tsp. Salt
  • 1 tsp. Pumpkin pie spice 
  • Garnishes: Dried cranberries, cinnamon, pure Maple syrup, pumpkin seeds 

Bring the water to a boil then reduce to a simmer & add the oats & salt. Stir occasionally & lower heat as the mixture starts to thicken.

Add the pumpkin pie spice & keep stirring until cooked. The timing is about 8 minutes. Cover & allow the oats to set about 2 minutes.

Garnish the oats & enjoy with coconut or almond milk.
