Ingredients
- 1 lb. Ground Beef
- 1 lb. Ground Pork
- 1/2 Onion, chopped
- 1-2 Bell peppers, chopped
- 1 Zucchini, diced
- 1 c. Mushrooms, sliced
- 2-3 Garlic cloves, mashed
- 1 28 oz. can crushed tomatoes
- 2 Qt. Organic marinara sauce
- 1 tbs. Dried oregano
- Salt to taste
- Crushed red pepper flakes to taste
Start by adding a pinch of course salt to a large pan over medium heat. Add the beef & pork.
Stir & break up the meat as it cooks.
Meanwhile add all the other ingredients to the crockpot. I like to use the empty tomatoes can to collect any excess fat as the meat cooks. Leave a little for flavor.
When the meat is no longer pink add it to the crockpot. Give it a stir & turn to low.
This is a very flexible recipe— add more vegetables, if you like. Use all beef or try chicken!
Serving ideas
- use over pasta & fresh spinach (pictured here)
- Use with zucchini noodles “zoodles”
- Make spaghetti squash “boats”
- Serve over spinach & grilled asparagus
- Layer with slices of eggplant & bake
