Salmon Sheet Pan Dinner with Frozen Salmon

Did you forget to defrost your fish! No problem! This sheet pan supper is delicious & I used frozen salmon fillets.

I cooked extra salmon to chill for a salad.

Ingredients 

  • Frozen Salmon Filets 
  • 1 c. Baby gold potatoes, halved
  • 1 Handful fresh asparagus, trimmed
  • 3 Tbs. onion, chopped
  • 3 Lemon slices
  • Olive oil for cooking
  • Salt, pepper, garlic powder 

Set the oven to 400 and line a baking sheet with foil. 

Add the potatoes & toss is a drizzle of oil, salt & pepper & place in the oven for 10 minutes.

Add the chopped onion & toss with the potatoes. Return the pan to the oven for five more minutes.

Now add the salmon fillets with a drizzle of oil underneath to prevent sticking. Season the fillets. Arrange the asparagus in a single layer with a small drizzle of oil, salt & pepper. Add the lemon slices.

Return the pan to the oven for 10 minutes. Adjust the timing if your fillets are especially large or small.
