Paleo Dark Chocolate Mug Cake

This indulgent cake can be mixed up in two minutes & takes only 90 seconds in the microwave

Ingredients

  • 1 tsp. Coconut oil
  • 1/4 tsp. Vanilla
  • 1 whole egg
  • 1/4 c. Almond flour
  • 1/8 tsp. Baking powder
  • Tiny pinch of salt
  • 1 tbs. Unsweetened dark chocolate powder
  • 1/4 c. Coconut milk

Place the coconut oil in a mug and microwave to melt, about 35 seconds.

Add the vanilla & egg & stir to blend well.

Add all the dry ingredients & blend well. Make sure to push any stuck to the sides down.

Microwave for 90 seconds. Run a life around the edges to loosen. Pour the coconut milk over the top & allow it to absorb into the cake before serving.
