Ham & Broccoli Frittata

This is an easy recipe using cooked ham or chopped deli ham. Choose lean, uncurled (nitrate-free) ham whenever possible.

Ingredients 

  • 1 c. Ham, chopped (no sugar, nitrates)
  • 1 c. Cooked broccoli, chopped
  • 2 tbs. Onion, diced
  • 1-2 Small peppers, chopped (or use 1/4 of a bell pepper)
  • 2 Roma tomatoes, sliced
  • 1/2 c. Egg whites 
  • 4 Whole eggs
  • Seasonings: Black pepper, paprika, Sunny Paris
  • Coconut oil for cooking

Whisk together the eggs & egg whites with the seasonings. 

Add a small amount of oil to an 8” -9” pan over medium heat & start cooking the onion & pepper. 

Preheat the broiler with your rack on the top setting.

Once the onion has softened add the ham & continue cooking until the ham is heated through & browned slightly.

Add the broccoli & stir to blend. 

Add about 2 tsp. coconut oil & once it melts pour in the eggs.

Stir the egg mixture pulling from center to sides as the eggs begin to cook. Once the egg mixture is about half cooked remove from the heat.

Arrange the sliced tomatoes over the top of the eggs & place under the broiler.

Watch it!! The timing will depend on how hot your broiler is & how much the eggs were cooked on the stove. This should be just a minute or two.

Cut cooked frittata into servings & gently run a spatula underneath to loosen before serving.

This recipe can use leftover broccoli. If you need to cook it just place the cut broccoli in an oven safe (glass) bowl with 1/4 c. water & cocer with a plate. Microwave for 2 1/2 minutes. Handle carefully the steam will be very hot.
