This is another easy freezer meal you can put together on the weekend and just place in the crockpot any time and enjoy the aroma of a slow cooked meal.
Ingredients:
- 1/2 c chopped onion, chopped
- 2 chopped bell peppers, cut into strips
- 1 head cauliflower, cut into large chunks
- 3 carrots cut into 2” pieces
- 1/2- 15 oz can coconut milk
- 1/2 c vegetable or chicken bone broth
- 1 tbs curry powder
- 2 tsp cumin
- 1 tsp black pepper
- 1 tsp salt
Place a crockpot liner in a bowl just slightly smaller than your crockpot.
Add all the ingredients
Secure the bag & freeze in the bowl. This insures that the meal will fit in the crockpot when you need it.
On the day you want the curry cook in crockpot on low setting all day.
Serve with fresh basil & rice.
