Add a blend of lettuce & spinach to a large bowl. Top with the following ingredients:
- Sautéed peppers & onions
- Pico de gallo
- Avocado
- Grilled meat in bite sized pieces (warm up leftovers)
- Beans (heat pinto or black beans)
- nonfat plain Greek yogurt
- Shredded cheese
- Lime wedges
- Chopped cilantro
