This is a nice change from the chili you may be accustomed to! This freezes and reheats nicely so it’s an ideal meal prep. Make up a couple of freezer meals and you’ll always have something ready to pop into the microwave! This page contains affiliate links. Paleo, Whole30 and dairy-free (without the added yogurt at serving)

Ingredients:

  • 2 lb boneless, skinless. chicken tenders or breast meat cut into strips (I love ButcherBox!)
  • 2 lbs chopped tomatillos with husk & stem removed
  • 1/2 c chopped onion
  • 2-3 chopped jalapeños 
  • 1 15 oz can pinto beans
  • 1/4 c chopped cilantro
  • 1 c chicken bone broth 
  • 1 tsp salt

Place a crockpot liner in a bowl just slightly smaller than your crockpot.

Add all the prepared ingredients.

Secure the bag & freeze in the bowl. This insures that the meal will fit in the crockpot when you need it.

Cook in crockpot on low setting all day.

Serve with fresh cilantro & dollop of Greek yogurt.
