Here’s a way to indulge in a breakfast favorite and still get your protein and all the flavors! I made mine using a gluten free bread but any kind works in this recipe. Day old bread makes the best French toast.

Ingredients to make 3-5 slices depending on the size of your bread
- 1/3 c. Almond milk
- 1/2 scoop Xendurance Vanilla protein
- Dash of ground cardamom and nutmeg
- 2 Eggs
- Coconut oil for cooking
- Bread of any variety, preferably day-old or slightly dry.
In a shallow bowl whisk together the almond milk and protein powder until well blended. Add the eggs and spices and whisk until completely blended.
Soak the bread to absorb the mixture rotating the slices as needed. Lift them carefully to avoid breaking.
Heat a nonstick pan over medium heat with a small amount of coconut oil. Add the soaked bread and cook both sides until golden and cooked through. Avoid high heat which will cook the outside before the center reaches the correct doneness.
Serve with pure maple syrup, honey or berries.
