Ham & Cheese Egg Bites

I love to make a batch of these on the weekend & have some ready for weekdays.

Ingredients

  • 12 slices ham
  • 1/3 c. shredded cheddar
  • 3 tbs. Pesto 
  • 12 large eggs
  • Kosher salt
  • Freshly ground black pepper
  • Chopped fresh parsley, for garnish

Preheat oven to 400 degrees.

Arrange the ham in silicone baking cups or lightly greased muffin tin. You may need to cut the ham for a good fit.

Add a pinch of cheese and pesto to each muffin.

Carefully carrack a large egg into each muffin cup and add a pinch of salt and pepper.

Bake 12-15 minutes.
