Corn Tortilla Air-Fryer Breakfast Baskets

I’ve been experimenting with my new air fryer! These little tortilla cups were easy to make and made a nice breakfast presentation.

Ingredients for 3 baskets

  • 6 corn tortillas 
  • 1 tbs. melted coconut oil
  • Filling ideas: chopped fresh spinach, pico de gallo, avocado, poached egg

Brush the corn tortillas with coconut oil and arrange 2 tortillas per baking dish. (Use a ramekin or other heat proof dish as a “mold”). Set a smaller ramekin inside to help maintain the basket shape.

Place the dishes in the air fryer in batches, as needed. You don’t need the fryer basket.

Set the air fryer to 9 minutes.  At the midpoint, carefully remove the inner ramekin and continue cooking.

Depending on the thickness of your tortillas, you may need to cook 1-2 minutes more.

Carefully remove from the fryer and sprinkle with sea salt while the baskets are still warm.

Remove from the baking dish once cooled and fill with your favorites!
