Mango sauce ingredients 

  • 3 ripe mangos 
  • 2 Jalapeños, finely diced
  • 1/4 red onion, chopped 
  • 1” grated ginger 
  • 1/4 c. Chopped cilantro 
  • Salt and pepper

Peel and cut the mango into cubes and place in a saucepan with all the ingredients.

Add 1/2 c water and simmer slowly until vegetables are cooked and mango is softened.

Using a potato masher, mash the sauce to your desired consistency. 

Adjust seasonings as needed.

Preheat the oven to 375°. Pat the chicken legs dry with paper towels and season lightly with salt and pepper. 

Preheat a large skillet or an oven-safe cooking pan over medium-high heat and add some oil. 

Sear chicken for a couple of minutes on both sides, until golden browned. 

Spread mango sauce all over the chicken, gently shake the pan to distribute the sauce and transfer the pan into the oven. 

Bake for 40-45 minutes.

Garnish with fresh cilantro.
