Spicy Shrimp & Andouille Sausage Sheet Pan Dinner

Here’s an easy sheet pan dinner full of Cajun flavors!

Ingredients 

  • 12 oz. Andouille sausage, cut into thick slices
  • 2 c. Fresh green beans 
  • 1 lb. Shrimp, peeled & deveined 
  • 1 Scallion, chopped, reserve the greens for garnish 
  • 2 tsp. Old Bay seasoning 
  • 1/2 tsp. Garlic powder 
  • Salt & pepper
  • Olive oil

Preheat the oven to 400 degrees. Line a large sheet pan with foil & spread the green beans & sausage onto the pan. Drizzle with olive oil. Add salt & pepper to the green beans & toss to combine the oil & seasonings. 

Bake 15-20 minutes. Check the green beans. They should be almost done. If the beans are thicker & need more cooking return to the oven for 5 minutes more.

Add the shrimp & bake an additional 5 minutes. 

Serve with cauliflower rice, greens & fresh lemons.
