Ingredients
- 1 3 oz. Pouch of Safe Catch Wild Caught Tuna
- 2 large pasture raised eggs
- 1/4 c. Egg Whites
- 2-3 Scallions, chopped
- 1/4 tsp. Old Bay seasoning
- 1 tbs. Coconut oil
Drain the tuna & break it up using a fork.
Melt the coconut oil in a medium sized skillet over medium-low heat. Add the scallions & cook until softened, about 2 minutes.
Meanwhile, whisk together the eggs, egg whites & seasoning.
Add the tuna & stir to combine with the scallions. Pour the egg mixture in.
Cook & stir the eggs to your desired consistency.
Serve with avocado, tomato & cilantro.
