Freezer Meal: Crockpot Chichen Chili Stew

Here’s this week’s easy freezer to crockpot meal with some extra servings for future

Place a plastic crockpot liner in a bowl just slightly smaller than your crockpot.

Add the following ingredients:

– 1 lb.  boneless, skinless chicken breast 

– 2 cans diced tomatoes with green chilies 

– 2 c. Zucchini in bite-sized pieces 

– 1 med. onion, chopped

– 2 med. fresh tomatoes, chopped 

– 3 tbs,  chopped cilantro 

– 2-3 finely chopped jalapeños 

– 1 tsp. cumin

– 2-3 smashed garlic cloves

– 1 tbs. chili powder

– 2 tsp. Sea salt

Secure the crockpot liner & freeze everything in the bowl. You can take your bowl back after the bag is frozen… the purpose is to make sure it will fit in your crockpot. Trust me on this one!

On the day you want to enjoy the chili, place the frozen crockpot liner in the crockpot in the morning & cook on low.

Serve the chili with lime & fresh chopped cilantro
