I lived in Montpellier, France for a while & in fact, that’s where my passion for cooking was born. This is my version of eggs Mme. Bovy would make where she would fill the center with fresh mayonnaise & crumble the yolks over the top.
Ingredients
- 2 Hard-boiled pasture raised eggs, chilled
- 1 tbs Dump ranch*
- 1 tsp Capers, drained
- 1 Chive, snipped into small pieces
- Sea salt & fresh pepper to taste
Peel the eggs & cut in half. Remove the yolks & set aside. Place the whites on a plate or serving dish.
Add Dump Ranch or mayonnaise to each half.
Crumble the yolks evenly over the top of the eggs. You can also use a grater for a fine consistency.
Top the eggs with capers, chives, salt & pepper.
