Easy meal prep! This delicious soup freezes and reheats well. it can also be made in the crockpot. nust simmer on low for 6 hours.

Ingredients 

  • 1lb. Butcherbox Italian Ground Sausage 
  • 8 c. Chicken stock
  • 2 Carrots, sliced
  • 2 Bay leaves 
  • 1/2 Medium Onion, chopped 
  • 15 oz Can chopped tomatoes 
  • 1 bunch collard greens, trimmed & chopped 
  • 3 c Cauliflower, coursly chopped 
  • 1/2 c Parsley, chopped fine

Brown one package of Italian sausage in the instant Pot sauté setting. (I used Butcherbox sausage)

Add the chicken stock, carrots, 1/2 chopped onion, bay leaves, chopped tomato & collard greens.

Pressure cook 30 minutes.

Add chopped cauliflower & parsley & pressure cook 10 more minutes
