Nicoise Salad

This is a salad that started in Nice, France and is now popular everywhere. If you love a Mediterranean diet this captures all those beautiful flavors. By the way, this is a great use of leftover haricots vert or potatoes! I keep Safe Catch Foods tuna in my pantry do whenever I crave a Niçoise salad I can put one together! This is my version of this classic.

Dressing Ingredients 

  • 1 tbs Lemon juice or white wine vinegar 
  • 1 tsp shallot or red onion, minced 
  • 1 Tsp. dijon mustard
  • 1 Pinch fresh thyme, chopped 
  • Freshly ground pepper
  • 1/4 c Extra virgin olive oil

Salad ingredients 

  • 1 Pouch Safe Catch Foods Elite Pure Wild Tuna
  • 1 Generous handful fresh spinach 
  • 1 Handful other greens of choice such as arugula, endive or spring mix
  • 1/3 c Cooked haricots verdes or hound green beans
  • 1/3 c Cooked small potatoes 
  • 1 hard-boiled egg
  • 1 Radish, sliced
  • 2 Cherry tomatoes, halved
  • 2-3 slices Red onion
  • Kalamata olives (I like 3-4)
  • 1 tbs Capers

To make the dressing, whisk together the ingredients & adjust salt & pepper to taste.

For the salad, arrange the greens in a large serving bowl or plate.

Break up the tuna with a fork. (Do not drain). Place the tuna on the bed of greens.

Continue arranging the ingredients until the salad is complete. Serve with the dressing.
