Who doesn’t love pizza in the morning? This Ahi Tuna brunch pizza is perfect any time! Ingredients 

  • 1 cauliflower pizza crust (you can also use a Naan or Tortilla 
  • 1 Can Safe Catch Ahi tuna, drained 
  • 2 tbs Mayonnaise 
  • 3 Scallions, chopped 
  • Generous handful fresh spinach 
  • 4-5 Cherry tomatoes, halved
  • 3 oz. Oaxaca cheese, separated into strips 
  • Olive oil to drizzle 
  • Salt & pepper to taste 

Preheat oven to 425 degrees 

In a small bowl, break up the tuna with a fork. Blend in the scallions, mayonnaise & a dash of salt & pepper. 

Place the cauliflower crust on a foil-lined baking sheet. Spread the tuna mixture over the crust leaving about 1” around the edges.

Add the spinach and tomatoes, piling the spinach in the center of the pizza. Drizzle with olive oil & season with salt & pepper.

Spread the cheese evenly over the top. Bake 12 minutes.

Serve with an egg on top of each portion!
