Bacon-Sweet Potato Breakfast Bites

These are delicious & every bite is a complete breakfast… egg, bacon, sweet potato & scallion! These make a fun brunch item plus you can make these ahead & your breakfast meal prep is covered.

Ingredients 

  • 5-6 slices of Butcherbox bacon, the amount you need will depend on the size of your muffin cups
  • 1/2 Sweet potato, shredded 
  • 2 Scallions, chopped 
  • 6 Pastured eggs

Preheat oven to 400 degrees.

Meanwhile, line 6 muffin cups with bacon in a single layer. Prepare the sweet potato (No beef to peel unless the skin is tough. Divide the sweet potato amongst the muffin cups.

Bake for 10 minutes. The bacon will be bubbling & the sweet potato will be softened. 

Add chopped scallion & then carefully crack an egg into each muffin cup.

Return to the oven for 10-12 minutes until the eggs are cooked.

For meal prep reheat in a covered dish for 45 seconds.
