Bacon wrapped chicken thighs, purple potatoes & pesto green beans… eating the rainbow tonight!
This is an easy dinner to prepare & use my tip for prep on a bag for easy cleanup!
Ingredients
– 2 Boneless, skinless chicken thighs
– Seasonings: salt, pepper, cumin, paprika
– 4 Slices of Butcherbox bacon
– 2 Thin lemon slices
– Fresh herbs: Basil, parsley, for example
– 1 scallion, trimmed & halved the long way
– Olive oil
Preheat oven to 400 degrees.
Pat the chicken dry with paper towels. I usually use a paper bag underneath for easy cleanup. Season both sides.
Lay the thighs smooth side down and place the lemon, scallion & herbs in the middle.
Roll up each thigh & wrap with 2 slices of bacon. Secure the bacon with toothpicks.
Add a tablespoon of olive oil to a heavy skillet or baking dish & place the wrapped chicken on top. Avoid crowding.
Bake 30 minutes. You can add potatoes after 5 minutes of cooking.
Turn on the broiler and allow the bacon & (optional potatoes) to crisp up 3-5 minutes.
