Here’s a real high protein, low-carb meal that’s packed with flavor! Bison is very high in protein & you’ll get some more protein in the kale, too! Feel free to mix things up & try this recipe with beef, chicken or turkey.
- The buffalo flavors come from Noble Made Buffalo Seasoning & Medium Buffalo Sauce. (They make a mild & hot, too!). I love these because you can “cut the sugar, keep the flavor” so that’s a win!
Ingredients
– 1 lb. Ground Bison
– 1/2 Medium Onion, diced
– 1 tbs. Noble Made Buffalo Seasoning
– 1/4 c. Plain Greek Yogurt
– 1/3 c. Noble Made Buffalo Sauce (I used the medium)
– 3 c. Kale, stems removed
– 2 c. Spinach
– 1 c. Shredded cheese
– 1/2 Lemon
– 2 tbs. Light olive oil
Heat a pan to medium & add the meat & onion, breaking up the meat as you add it. Add the Buffalo Seasoning. Cook & stir occasionally, breaking up the meat as needed.
Meanwhile, in a large bowl combine juice from lemon & the olive oil. Add the greens to the bowl. Use your hands to mix & massage the greens. Yes, massage! This is what makes a kale salad good! Place the greens into three bowls.
Combine the Greek yogurt with 1 tsp. Buffalo Sauce to make a spicy crema for serving.
Add 1/3 c. cheese to each bowl.
The meat should be cooked now. Lower the heat & add the remaining Buffalo Sauce & stir to combine. Cook 2 more minutes.
Add 1/3 of the bison mixture to each bowl. Enjoy!
Note: you can prepare the Búfalo in advance, refrigerate, then reheat as needed. This is a great meal prep item to top your biwls, salads or use in a wrap!
