Ingredients
- 2 c prepared Sloppy Joseph (1 jar is used per pound of beef or your choice of meat. You will have enough leftover for 1-2 sandwiches)
- 1/2 c Egg whites
- 6 Whole Eggs
- 1 Chopped scallion (both the bulb and the greens)
- 1/3 c Shredded sharp cheddar cheese
Preparation
- Preheat oven to 350 degrees
- Add the prepared Sloppy Joseph to a medium sized mixing bowl and break it up into small pieces, if necessary
- Add the scallion to the bowl with your meat mixture
- Whisk together the egg whites, eggs, salt and pepper
- Pour the egg mixture into the bowl and combine well
- Add the mixture to 12 muffin cups. A small gravy ladle is helpful
- Bake for 20 minutes
- Allow the muffins to cool for a few minutes and enjoy!
For meal prep, reheat for 40-45 seconds in the microwave in a covered glass dish
To freeze, bring to room temperature and freeze in a closed container. Defrost completely before reheating.
