Ingredients

  • 2 c prepared Sloppy Joseph (1 jar is used per pound of beef or your choice of meat. You will have enough leftover for 1-2 sandwiches)
  • 1/2 c Egg whites
  • 6 Whole Eggs
  • 1 Chopped scallion (both the bulb and the greens)
  • 1/3 c Shredded sharp cheddar cheese

Preparation 

  • Preheat oven to 350 degrees 
  • Add the prepared Sloppy Joseph to a medium sized mixing bowl and break it up into small pieces, if necessary 
  • Add the scallion to the bowl with your meat mixture 
  • Whisk together the egg whites, eggs, salt and pepper
  • Pour the egg mixture into the bowl and combine well
  • Add the mixture to 12 muffin cups. A small gravy ladle is helpful 
  • Bake for 20 minutes 
  • Allow the muffins to cool for a few minutes and enjoy!

For meal prep, reheat for 40-45 seconds in the microwave in a covered glass dish

To freeze, bring to room temperature and freeze in a closed container. Defrost completely before reheating.
