This is one of my favorite recipes using rotisserie chicken. It adapts very well for leftover turkey. In fact, I look forward to the leftovers so I can make this salad! Makes 3 servings the way I have assembled it in this recipe. You can always adjust depending on how much turkey you have!
Ingredients
- 14 oz. Rotisserie Chicken (white meat)
- 1/8 c. Chopped onion
- 1/3 c. Greek Yogurt, Plain, Whole Milk
- 2 Celery stalks
- ½ tsp. Sea Salt
- ½ tsp. Ground black Pepper
- ½ tsp. Dry or fresh dill
Mis en Place Shred the chicken or dice it with a knife. Chop the celery and onion
Preparation
- Combine all prepared ingredients in a large mixing bowl
- Combine well
- Divide incorporated mixture into 3 servings.
Suggestion – Serve with fresh avocado over salad with lemon, tomato and cilantro. Also makes a great snack with whole grain crackers
