This is one of my favorite soups because it’s so rich in flavor yet it has the freshness from the delicious toppings.
Soup Ingredients
- 8 c. Chicken bone broth
- 4 large carrots, sliced
- 2 Roma tomatoes, chopped
- 1 c. Fresh spinach
- 1 c. Cooked black beans
- 1 c. Cooked rice
- 4 tbs. Chopped cilantro
- 2 c. Shredded, cooked chicken
Simmer all the ingredients in the bone broth until the carrots are just tender.
To serve…
- Add tortilla chips or torn corn tortillas to a serving bowl with queso blanco of mozzarella cheese.
- Put the hot soup over the tortillas & cheese
Toppings
- 1/3 c. Pico de gallo
- Sliced avocado
- Chopped cilantro
