Ham & Veggie Frittata

Ingredients 

  • 1/2 c. Egg whites 
  • 6 Whole eggs 
  • 1/4 c. Coconut milk 
  • 1/2 oz. Shredded gruyere or Swiss cheese
  • 3 Scallions, chopped 
  • 1/4 Red bell pepper, finely chopped 
  • 1/2 to 1 c. Cooked ham, chopped 
  • 2 tbs. Coconut oil 
  • 8 Grape tomatoes, halves

Whisk together the egg whites, eggs & coconut milk with a pinch of salt & black pepper. 

Pre heat your broiler with the rack at the top.

Heat an 8-9” pan over medium heat with 2 tbs. coconut oil. Add the ham, scallions  & peppers with a pinch of salt & cook gently for 3 minutes. Add the spinach & cook until softened.

Turn up the heat on the pan slightly & pour the egg mixture into the pan. Stir gently as the eggs starting set. Add the cheese & stir to blend.

Place the pan under the broiler for a few minutes until the frittata is set. Watch carefully this does not take long!

Run a rubber spatula around the edges before cutting the frittata into 4 servings.
