Ingredients
- 2 lbs skinless chicken thighs
- 28 oz. Can crushed tomatoes
- 1-2 Bell peppers, cut into 1” pieces
- 1/2 Onion, diced
- 2 c. Mushrooms, sliced
- Seasonings: Salt, pepper, oregano, garlic powder
- For the day of cooking: 2-3 Zucchini or cooked pasta
Take a plastic disposable crockpot liner and place in a bowl lined with a paper towel. The bowl needs to be just slightly smaller than your crockpot. This is important!
Add the meat & all ingredients to the bag, Then secure the bag. Squish it a bit to blend the ingredients.
Place the bowl with the bag of ingredients in the freezer. You can take back your bowl once the bag is frozen solid. You need to freeze in the bowl because it serves as a mild so the frozen bag will fit in your crockpot.
On the day you want to enjoy the meal place the bag of ingredients in the crockpot. I allow it to cook on low all day.
To serve with zucchini noodles add your “zoodles” about a half hour before serving and allow them to cook in the broth. If your serving with pasta cook it separately & add the drained pasta.
Garnish with fresh herbs like parsley and basil, grated Parmesan and crushed red pepper flakes.
