This is a sheet pan dinner so just toss out the foil and clean up is done! This is an excellent dish for meal prep. Ingredients 

  • 2 lbs. Chicken thighs 
  • 1 Pineapple, cut into wedges
  • 2 Bell peppers, cut into strips
  • 1/2 Red onion, sliced
  • 2 tbs. Olive oil 
  • 1/4 c. Coconut aminos
  • 2 tbs. Honey 
  • 1 tsp. Garlic powder 
  • 2 tsp. Ginger
  • 1/4 c. Shredded coconut 
  • 1 tbs. Chopped cilantro 

Preheat the oven to 375 degrees.

Place the chicken in a bowl and add the olive oil, coconut aminos and the seasonings & blend. Allow the chicken to marinate while repairing the vegetables and pineapple. 

Cover a large baking sheet with heavy foil and place the chicken skin side up. Place into the oven for 15 minutes.

Toss the vegetables and pineapple in the remaining marinade. After the chicken cooks for 15 minutes add the vegetables and pineapple to the pan and return to the oven for 15 minutes.

Sprinkle the coconut over the top and return to tbd oven 3-5 minutes. Sprinkle chopped cilantro over the top.
