Blueberry-Banana Oat Bake

Ingredients 

  • 2 Ripe Bananas
  • 1 1/3 c. Blueberries 
  • 1 tbs. Grass fed butter or coconut oil 
  • 2 1/2 c. oats
  • 1 c. Almond milk
  • 1 c. Egg whites 
  • 2 scoops Vanilla protein (I use Xendurance) choose one without too many ingredients 
  • 1 tsp. Cinnamon 
  • 1/4 tsp. Nutmeg 
  • 1/4 c. Raisins

Use a tartan pan or pan that can go from burner to oven. Melt butter over medium heat and add banana slices. Cook gently about 3-5 minutes allowing them to soften. Remove from heat.

Pour half the blueberries over the bananas.

In a large bowl combine all the remaining ingredients and blend well. 

Pour the oats mixture over the bananas and spread evenly.

Bake 40 minutes and check for doneness.

Remove from oven. Carefully run a knife around the edges to looses any bits stuck to the sides. Place a dinner plate over the pan. Using oven mitts for safety flip over so the baked oats are on the plate banana side up.

Divide into 6 servings.
