I love this salad because it’s so easy and it hits all the flavors and textures! It’s different every time but typically a base of mixed greens, red cabbage, chicken or turkey, apple and walnuts. I make the vinaigrette in a large bowl then add all the salad ingredients on top and toss.
Lemon Vinaigrette
Ingredients
- 1/2 Fresh lemon
- 1 tbs. Extra Virgin Olive Oil
- 1 tsp. Dijon mustard
- 1/2 tsp. Honey
- Seasonings: Garlic powder, tarragon, salt, pepper
Zest half the lemon into a bowl then add the juice from half a lemon.
Combine all the ingredients and blend well with a whisk. This makes enough for a large dinner-sized salad or several side salads
