This is a new version of one of my favorites, shrimp & papaya only this time I made this salad with mango.
Marinade for 6 large shrimp
- juice from a whole large lime
- 1/2 packet of Sason Goya
- Dash of garlic powder & paprika
Salad for 2
- 1 Head of Bibb lettuce
- 1 Celery stick, sliced
- 1/4 Red bell pepper, chopped
- 1/4 c Red onion, thinly sliced
- 1/4 c Cilantro, chopped
- 2 Mangos cut into 1” cubes
- 3 tbs Shredded coconut, lightly toasted
Grill the shrimp on skewers for 3-4 minutes per side.
Arrange the salad ingredients and dress with a simple lemon vinaigrette.
