Here’s one answer to the question, what can I make with fennel? I love this healthy slaw with barbecue or on tacos!
Ingredients
- 3 tbs Olive oil
- 2 tbs Cider vinegar
- 1/4 lemon juiced
- Salt & pepper
- 1 LG Fennel Bulb + fronds
- 1 Apple
- 3 Celery stalks, leaves included
- 3-4 chopped scallions
In a large bowl the olive oil, vinegar, lemon juice, salt and pepper. Add the remaining ingredients as you prepare them.
Cut the stalk off the end of the fennel and slice as thinly as possible. Use a mandolin, if possible for thin, consistent slices. Slice the celery and core the apple then cut into julienned slices. (Matchstick sized pieces). Chop the celery leaves.
Toss well to combine and add more seasoning as needed. Garnish with chopped fronds.
