Ingredients
- 1/2 c. Egg whites
- 4 Whole eggs
- 1/4 c. Coconut milk
- 1/2 oz. Grated cojita cheese
- 3 Scallions, chopped
- 2 c Spinach, chopped
- 2 Chicken andouille sausage links, chopped
- 2 tbs. Coconut oil
- 1 tomato, sliced
Whisk together the egg whites, eggs & coconut milk with a pinch of salt & black pepper.
Pre heat your broiler with the rack at the top.
Heat an 8-9” pan over medium heat with 2 tbs. coconut oil. Add the sausage & scallions with a pinch of salt & cook gently for 3 minutes. Add the spinach & cook until softened.
Turn up the heat on the pan slightly & pour the egg mixture into the pan. Stir gently as the eggs starting set. Add the cheese & stir to blend.
Top with tomato slices.
Place the pan under the broiler for a few minutes until the frittata is set. Watch carefully this does not take long!
Run a rubber spatula around the edges before cutting the frittata into 4 servings.
