Here’s a great meal prep you can reheat easily with so many option!

Ingredients 

  • 1 1/2 lbs Butcherbox Ground Chicken
  • 1 egg, beaten
  • 1/2 c Almond flour
  • 3 Garlic Cloves, mashed 
  • 1/4 c. Fresh parsley, finely chopped 
  • 1 tbs. Fresh Thyme, chopped 
  • 1 tbs. Dried Oregano
  • 1/2 tsp Onion powder
  • Sea salt & Black pepper 
  • 1 Chopped tomato 
  • Olive oil for cooking 

Start by whisking the egg in a large bowl.

Add all remaining ingredients except tomato & olive oil then blend together by hand just until combined. (Avoid over working the mixture)

Heat a large pan to medium-low with 1 tbs olive oil. Using an ice cream scoop or spoon, make balls and place in the hot pan. 

TIP: leave the center of the pan open so it’s easier to turn the meatballs 

After about 2 minutes, carefully turn the meatballs. Squeeze gently to reform into a ball if any loose their shape. 

Cook in batches, if necessary then combine the meatballs when the outside is golden. 

Add chopped tomatoes & a sprig of fresh rosemary, if desired.

Cover & cook 10 minutes more on low heat. Shake the pan occasionally to rotate the meatballs.
