What a treat! This is a delicious way to use papaya. This salad would make a great brunch side or lunch!

Ingredients 

  • 1 Medium sized avocado or 1/4 Tropical Avocado, pealed  & diced into bite-sized pieces 
  • 1/4 LG Papaya, peeled & diced into bite-sized pieces 
  • 1/8 c Red onion, thinly sliced 
  • Juice from 1/2 lime
  • 1 tsp Lime zest
  • 1/2 tbs Olive oil
  • 1/2 tsp Tajin or Old Bay seasoning 
  • 3 tbs Cilantro, chopped 
  • A blend of fresh greens (I used spinach leaves, curly endive & flashy leaf lettuce)
  • Micro greens or more cilantro to garnish 

In a medium sized bowl gently mix the avocado, papaya, onion, cilantro, seasoning & lime juice.

Arrange greens on a serving plate and soon the salad over the greens. Drizzle olive oil over the top & sprinkle the lime zest over the salad.

Garnish with micro greens or fresh cilantro. Best served immediately.
