Spicy Pumpkin Hummus

Ingredients

– 1 can (15 oz) chickpeas, drained and rinsed
– 1 can (15 oz) pumpkin puree
– 2 tbs olive oil, plus more for serving
– 2 chipotle chilies in adobo
– 1 clove garlic, grated
– 1 tbs honey
– 1/4 tsp cinnamon
– 1/4 tsp cayenne powder
– 1/2 tsp cumin
– 1/2 tsp oregano
– 1 tsp chili powder
– Salt & pepper, to taste
– Pepitas (shelled pumpkin seeds), for serving
– Cranberry sauce, for serving

Directions

Combine the chickpeas, pumpkin & olive oil in a food processor and puree until smooth.
Finely chop the chipotle chilies & add to a bowl. Mix the chilies with the garlic, honey, cinnamon, cayenne, cumin, oregano, chili powder, & salt & pepper. Stir chipotle mix into the hummus.
Drizzle with olive oil, add some cranberry sauce & sprinkle with pepitas seeds before serving.
