Lemon hummus just takes a few minutes to prepare. Once you make your own you won’t want to go back to store bought again!
Ingredients
-1 15oz. can of Garbanzos, drained and rinsed
-2 tbs. Tahini
-1 Lemon, zested & juiced
-Olive Oil as needed
-Seasonings: Cumin, salt, pepper
-Optional garnish: Parsley, pumpkin seeds, sunflower, or almonds & lemon zest
Directions
Place the beans in a processor and pulse to break them down a bit.
Add the tahini, lemon juice and zest and the seasonings and pulse some more. Stop occasionally to push down the sides so all ingredients are blended.
Now add additional oil and lemon juice as needed to get a creamy texture. Taste and adjust seasonings.
Garnish with lemon zest, nuts or seeds & chopped parsley.
